    1 Tablespoon chopped fresh Oregano
    1 Tablespoon chopped Fresh Basil
    1 clove garlic crushed (I used minced and 1 teaspoon)
    1 can (15 oz) garbanzo beans
    1 zucchini, halved and sliced
    1/2 cup sliced Portobello mushrooms
    1 red onion, chunked
    1 red pepper sliced
    1-2 plum tomatoes chopped


Heat large skillet over medium heat (spray with non-stick spray)
Stir in all the spices, add the garbanzo beans and zucchini.
Stir well to coat veggies with the spices.
Cook covered for 10 minutes stirring occasionally.
Stir in mushrooms and cook until tender, stirring occasionally.
Place the chopped tomato on top of the mixture. Cover and let the tomatoes steam for few minutes, but don't let them get mushy.
Serve immediately.
