Ingredients

    1/2 lb shrimp
    1/4 medium onion
    1/2 tsp. EVOO
    1/4 cup scallion
    1 clove garlic
    1/2 cup crushed tomato
    1/8 cup white wine
    1 tsp lemon juice
    1 TBS flat leaf parlsey
    1/8 tsp dried oregano
    S&P to taste
    4 small kalamata olives chopped
    1 oz feta cheese
    !/2 cup panko bread crumbs
    drizzle EVO

Directions

1. Preheat oven to 450 degrees
2. Remove shells, vein; leave tail intact
3. Rinse and dry
4. Sautee onions in oil until transparent. Add few drops of water, if necessary, add garlic and green onion and cook 2 minutes. Add tomatoes, wine, lemon juice, half the parsley, chopped olives, oregano, salt and pepper to taste.
5. Reduce heat, cover and simmer for 30 minutes until thickened.
6. Pour half the sauce into shallow casserole, arrange the shrimp on top. Pour the rest of sauce over the shrimp, and feta on top, sprinkle panko bread crumbs and drizzle 1 tsp EVOO over top.
7. Bake at 450 for 12-15 minutes or until shrimp are pink and topping is golden- brown
8. Garnish with remaining parsley and serve. Makes 2 large or 3 smaller servings.
