Introduction

This peanut butter pie certainly is not low in fat; however, the majority of the fat is healthy monounsatruated fat from peanut butter. It is certianly less Calories and fat than more traditional peanut butter pies. It is also a good source of protein considering it is just a dessert. Ingredients

    Filling:
    Powder sugar x 1 cup
    Peanut butter x 1 cup
    8oz softened non-fat cream cheese
    1 cup skim milk
    8oz non-fat cool whip
    Crust:
    1/2 box chocolate teddy grahams
    2-4 Tbsp light margarine (Smart Balance Light or I can't believe it's not butter light)

Directions

Filling: Soften cream cheese and cool whip to room temp. Blend peanut butter, cream cheese, and powder sugar in mixer, food processor or with hand mixer. Add and mix in milk. Fold in cool whip.
Crust: crush teddy grahms in food processor. Place in 8" pie pan and poor melted margarine over. Press crumbs to form crust. Bake at 350 degrees for 10-15 minutes or until set.
Once crust has cooled, add filling and refridgerate until time to serve.
