Ingredients

    1 cup toasted coconut
    2 cup milk
    1 tsp vanilla
    .5 cup sugar
    2 1/3 Tbsp cornstarch
    2 eggs
    2 Tbsp butter
    1 cup heavy cream
    4 Tbsp powdered sugar
    Baked pie crust

Directions

Heat milk and vanilla in saucepan. Combine sugar, cornstarch and eggs until smooth paste is formed. Bring milk to boil and pour into paste, stirring constantly. Return to saucepan over medium heat. Whisking constantly, heat just until custard begins to bubble and thicken. remove from heat and stir in butter. Fold in about 2/3 of coconut. Pour into baked pie shell. Refrigerate 1 hour. Whip cream gradually adding powdered sugar until peaks form. Spread over pie and top with remaining coconut.
