Introduction

Ingredients

1-4oz. Tilapia filet (or whatever fish you choose)
1 tsp. Extra Virgin Olive Oil
1/2 tbsp. Unsalted Butter (the real stuff works best)
Emeril's Bayou Blast, added to taste (Actually, any Cajun Spice will work, so choose your favorite)*
Directions
In a skillet, melt butter and olive oil. You should have just enough to cover the skillet.
Cover the fish with the cajun spice as you would a rub.
Cook the fish in the butter/oil. The fish should cook 2-5 mins on each side, depending on thickness, until done.
The fish will probably fall apart when you flip it and remove it. Just be careful.
Let the fish drain on a paper towel to remove as much of the butter and oil as you can.
This recipe makes a single filet, but can be easily adjusted to make more.
* - to cut back on sodium, create your own rub with paprika, garlic, cayenne pepper, and black pepper.
