Ingredients

    5 cups filtered water
    1 cup brown lentils, rinsed
    cooking oil spray
    2 medium onions, chopped
    2 cloves garlic, crushed
    1 tsp ground cumin
    4 oz. whole soybean pasta
    4 cups kale, chopped
    2 Tbsp lemon juice
    salt and pepper to taste






Directions

Spray bottom of large saucepan with cooking spray. Over medium heat, saute chopped onions and garlic until onions are translucent, about 5 minutes. Add water, lentils, and cumin. Bring to a boil, reduce heat to low, cover, and simmer for 25 minutes until lentils are tender. Add the kale and pasta, increase heat to medium and cook uncovered for about 10 minutes until pasta is tender and most of the broth is absorbed leaving a sauce. Stir in lemon juice. Add salt and pepper to taste and serve. Makes 4 servings.
