Grilled version of Ratatouille Grilled version of Ratatouille
Number of Servings: 4


    * 1 x eggplant, sliced into 4 lengthwise quarters
    * 2 x zucchini, cut in half, lengthwise
    * 2 x red peppers, cut in half and seeds removed
    * 2 x onions, peeled and cut into thick slices
    * 4 x tomatoes, cut into eighths
    * 1 bunch Italian parsley, chopped
    * The leaves from 1 bunch of fresh basil or oregano (optional)
    * Salt and pepper to taste
    * Olive oil


1. Preheat your grill to its highest heat.
2. Lightly coat the eggplant, zucchini, red peppers and onions with olive oil and season with salt and pepper.
3. Place the vegetables on a hot grill and sear on both sides until they soften and grill marks appear.
4. Chop grilled vegetables into bite-sized pieces then toss with the tomatoes, parsley and optional basil or oregano. You may also toss the still-warm vegetables with a few handfuls of baby spinach.
