Number of Servings: 6


    2 cups whole wheat pastry flour
    1.5 tsp baking powder
    1 tsp baking soda
    2 TBSP ground flaxseed meal
    1.5 cups lowfat yogurt or soy yogurt
    1 1/4-1 1/2 cups lowfat milk or soy milk


Combine dry ingredients in large bowl & stir well. Make a well in middle of bowl and add yogurt & milk. Add more milk to make a smooth pourable batter, not runny.

Ladle into preheat skillet to make 3-4 inch wide pancakes & cook until golden brown.

***I use a 1/3 measuring cup to get 3.5-4.5 inches pancakes. Usually yields around 12-15 pancakes per batch. Serving of 2 pancakes per person.

My kids like wild frozen blueberries in their 'cakes, so I sprinkle them on top once I've ladled the batter into the pan.
