This is straight from Genoa, Italy the birthplace of Pesto. Freezes well. This is straight from Genoa, Italy the birthplace of Pesto. Freezes well.
Number of Servings: 24


    2 cups fresh basil leaves
    1/2 cup olive oil
    1/2 cup grated parmesan
    1/2 cup grated grana Padano or Romano
    4 garlic cloves, chopped
    1/2 cup pine nuts, toated
    1/4 teaspoon salt


Using a pestle and mortor or a Food Procesor, crush the basil. Add the olive oil, cheses, garlic, pine nuts, salt and crush until a paste is formed.

Service with warm pasta, on top of pizza or plain with bread.

TO FREEZE: DO NOT ADD THE NUTS OR CHEESE prior to freezing - these get added when you are ready to use. Then - defrost the basil base, add the nuts and cheese and process until you have the paste.

Recipe makes approximately 3 cups. 1 serving equals approximately 2 Tablespoons.

Freezing in 1 cup sizes works well.
