Introduction
Using my Chicken & Greens Soup as a base, I added a can of Whole baby clams and a package of fake crab and shrimp meat. I usually also add a bit of fresh seafood just as it finishes warming, plus a touch of Romano cheese grated over the top with fresh black pepper for a warming, winter meal. Ingredients
-
6 cups Chicken & Greens Soup (see my recipe)
1 can Bumblebee Fancy whole baby clams
1 16 oz. package frozen fake crab with shrimp
1 15 oz. can chopped tomatoes (not figured in nutritional info)
Directions
Makes about 8 generous 1 cup servings.
1. Heat the soup to just boiling. Add the canned clams, with the broth in the can and the thawed krab meat. Reduce heat to a simmer and cover, let cook gently for about 15 mintues. Do not overcook or the clams get tough.
Optional: Add a 15 oz. can of chopped tomatoes for something a bit closer to Manhattan clam chowder.
Also, you can add a few cooked, whole shrimp on top, and then grate a bit of fresh Romano or Parmesean cheese and a bit of fresh, chopped parsley just before serving makes this a beautiful first course.
