    1.5 lbs. extra lean ground beef
    1 large onion
    3 cloves minced garlic
    1 can Goya Black Beans
    1 can Goya Pink Beans
    1 can Goya Red Kidney Beans
    2 cans Diced tomato with Onion & Garlic
    1 large can crushed tomato or tomato puree
    1 small can diced green chilis (optional)
    1 small can pumpkin (optional, but adds a ton of nutrients, and thickens)
    2 packets Chili seasoning (low-or no-salt added)
    1 Tbs ground cumin (optional)
    1 Tbs chili powder (optional)


Makes 14 1-cup servings.

Dice onion and brown with beef and minced garlic. Add all beans, drained (and rinsed if not low-sodium). Add tomatoes, tomato puree & chilis, undrained. Add packets of chili seasoning, cumin, chili powder, & canned pumpkin. Stir until mixed thoroughly. Add water to desired consistency. Simmer 5-10 minutes until heated through. Reheats extremely well. Can be doubled or tripled for large groups, but you will need to cook in a dutch oven or stock pot. Nonstick pans work best to avoid adding any oil. Drain/rinse meat to cut out even more fat. Eliminate green chilis and additional spice to make a very mild version. Serve with low fat shredded cheddar cheese, fat free sour cream, pico de gallo, and cilantro. YUM!
