Introduction

Number of Servings: 20

Ingredients

    1 cup of oatmeal
    3 large bananas
    1 1/2 cups of low fat vanilla soymilk
    1/4 cup soy protein powder
    1/4 cup sugar
    2 cups whole wheat flour
    1 1/2 tsp salt
    1 egg
    4 tsp baking powder
    1 tsp cinnamon
    1 tsp vanilla

Directions

1. Using a blender grind the oats into oat flour. Set aside in a mixer.
2. Using a blender mash the three bananas with the soy milk and vanilla flavoring.
3. Add the flour, salt, baking powder, cinnamon, and sugar to the dry mixture.
4. Mix the flour mixture with the banana and soy milk mixture.
5. Add an egg if you like.
6. Add the water.

Pan fry the pancakes in a skillet with non stick spray.

As you are turning them wait-- until they are almost dry on top. They won't overwhelmingly taste of banana-- adding a bit of banana pudding mix would make the flavors more pronounced.
