    1 C White Flour
    1 C Whole Wheat Flour
    2/3 Cup Sugar
    2 tsp Baking Powder
    1/4 tsp Salt
    1 C Raisins (not packed)
    2/3 C Coconut Milk
    1/4 C Applesauce, unsweetened
    1 Egg, lightly beaten
    1/2 tsp Vanilla Extract


Preheat oven to 400°.

Combine flours, sugar, baking powder, and salt in a medium bowl. Stir in raisins. Make a well in the center.

Combine remaining ingredients in a small bowl, whisking well. Pour into the well in the dry ingredients. Stir until everything is moist, don't over mix.

Pour into 12 muffin cups (lined with papers or sprayed). Bake at 400° for 20 minutes or until muffins spring back when touched lightly in center. Remove muffins from pans immediately; cool on a wire rack.
