Introduction

Ingredients

    Roasted red pepper (preferably fire roasted).
    2 cups sharp or mild cheddar cheese, finely shredded
    1/2-2/3 cup real mayonnaise (depending on how "wet" you like it).
    Paprika to taste (optional)

Directions

chop up the roasted red pepper into small pieces.
Mix all ingredients together. Can be eaten immediately, but it's better if it sits in the fridge overnight.

    This is how I make mine and I absolutely love it with the new wheat bread rounds.....It is perfect for lunch with a peice of fruit....I can work it into my meal plans.. - 7/27/10
