    1 Chayote Squash
    1/2 c. coarsely chopped Apple
    1/4 c. coarsely chopped Onion
    1 Tbsp. chopped Pecans
    Dash of Salt
    Dash of Pepper (I used Ground Red Pepper)
    5 sprays of I Can't Believe It's Not Butter Spray


Bring large pot of water to boil. Halve Chayote, remove seed and place in boiling water Boil 15 minutes.
While Chayote is boiling, chop apples and onion and spray skillet with Pam. Put onions in skillet on low and sweat (I had to add a touch of water).

Once Chayote has boiled 15 minutes, remove from water and drain on paper towel. Peel and cube. Place Chayote, Apples and Pecans in with Onions. Sprinkle with pepper. Cook until Chayote is fork tender. (20 - 30 minutes) Stir as needed.

Remove to plate. Sprinkle with salt (if desired) and spray with butter spray.

  • I have never used chayote before I thought it would be more like zucchini, I guess it is a cross between a pear and squash, not bad. I didn't cook the apple, added it after chayote was cooked. I like the crisp taste of the apple with the onion and chayote. Thank you for a good recipe. - 5/30/09
