    4 Green Bell Peppers, large, core removed
    1 tbsp Olive Oil, Extra Virgin
    8 oz Turkey, Ground turkey, 93% lean
    ½ c Brown Rice, cooked
    ½ c Onions, chopped
    1 clove Garlic, crushed
    1 stalk Celery, raw, diced
    ¼ c Mushrooms, diced
    ¼ c Carrots, grated
    1 c Tomato Sauce
    Dried Italian spice mix, salt, pepper and red pepper flakes to taste.


Preheat oven to 350. Sauté onions, garlic, celery, carrots and mushrooms in oil until soft. Add ground turkey and stir until cooked. Add rice and Romano cheese, mix well. Stuff peppers and place in casserole dish. Mix tomato sauce with spice, pour over peppers. Cover and bake until peppers are cooked (60 – 90 mins).
