    10 oz lasagna noodles (ready to bake kind)
    2 Tbspn butter
    4 large leeks, white parts thinly sliced
    4 cloves garlic, chopped
    1/2 cup flour
    4 cups milk
    1 tspn dried thyme
    1 tspn salt
    3/4 tspn nutmeg
    1/2 tspn black pepper
    1 2-pound butternut squash (peeled, seeded, grated)
    2 Tbsp fresh sage, chopped
    2 10oz packages of frozen spinach, thawed
    1 Tbsp olive oil
    2 cloves garlic, minced
    1/4 tsp salt
    1/4 tsp red chili flakes
    6 oz. grated parmagiano (about 170 grams)


Peel and grate squash using a food processor. Mix in chopped sage.

Squeeze most of the water from thawed spinach. In a medium pan, heat oil over medium heat and saute garlic for 1 minute. Add spinach, salt and chili flakes and stir well. Cook just until any liquid evaporates.

To make leek sauce: Melt butter and cook leeks and garlic over medium heat until softened (~6 mins.). Sprinkle with flour and cook 2 minutes, stirring. Whisk in milk in a steady stream then cook until thick and bubbly (~9 mins.). Stir in thyme, salt, nutmeg, pepper.

Build lasagna in a sprayed 9x13" pan. Spoon in 1/3 cup of leek sauce to coat bottom of pan. Lay down three noodles, then 1/2 of squash, 1/3 of sauce, three more noodles. Next is the spinach mixture, then repeat squash, sauce, noodles, and finally top with remaining sauce. Sprinkle with parmesan.

Bake in a 350F oven for 30 minutes covered, then remove cover and bake another 20 minutes. Result should be a bubbling, gooey, golden pan of amazing lasagna. Let the pan sit for 10 minutes then enjoy with a tossed salad.
