Ingredients

    1 box no name lemon cake mix
    1package instant Lemon pudding
    4 eggs
    1 cup water
    1/2 cup canola oil
    1/4 cup poppy seeds

Directions

Preheat oven 350F degrees
Prepare muffin tins (18 large muffins)
Combine cake mix with pudding mix
Add eggs, water and oil.
grate the rind off 1 lemon into mixture
Stir in poppy seeds
divide into 18 muffin tins
bake for about 24 minutes
Lemon Glaze
Add 1 cup icing sugar to the juice of 1 lemon and drizzle over warm muffins.
