Number of Servings: 6


    1 onion chopped
    2 carrots diced
    3 celery stalks chopped
    1/2 cup chopped green pepper
    1/2 cup chopped red pepper
    2 cloves garlic minced
    1 Tbls. olive oil
    1 large can Italian style plum tomatoes
    1 cup frozen green beans
    1 cup frozen lima beans
    1 cup chopped zucchini
    2 Tbls. of mixed dried Italian herbs or 1 Tbls dried basil plus 1 Tbls dried oregano
    1 Tbls salt or less to taste
    pepper preferably freshly ground
    1 1/2 cups water


Chop onion, celery, carrots, and peppers. Saute in olive oil until onion is translucent but not browned. Add minced garlic. Saute additional 2 - 3 minutes.
Put in crock pot. Slice the canned tomatoes saving the juice. Add the tomatoes and their juice, water, Italian herbs, salt and several grindings of fresh black pepper. Cook on low 8 - 10 hours.
Add lima beans, green beans, and zucchini during the last 1/2 hour. When they are done, correct the seasoning (salt & pepper to taste).
Serve with a grating of fresh parmesan cheese.
For a main dish add 1 or 2 cups of canned kidney beans or chick peas. Added parmesan cheese and beans are not calculated in the nutritional information for this recipe.
