Ingredients

    16oz frozen stir-fry vegetables
    2 tbsp quick-cooking tapioca
    1 lb skinless boneless chicken breast, cut into 1-inch pieces
    3/4 cup chicken broth*
    3 tbsp orange marmalade
    2 tbsp teriyaki sauce*
    1 tsp dry mustard
    1/2 tsp ground ginger
    2 cups hot cooked rice

    *Use low-sodium versions to cut down on the sodium in the recipe

Directions

In a 3-1/2 or 4-quart slow cooker combine frozen vegetables and tapioca. Add chicken pieces.
In a small bowl combine chicken broth, orange marmalade, teriyaki sauce, dry mustard, and ginger. Pour over mixture in cooker.
Cover and cook on low-heat setting for 4-5 hours or on high-heat setting for 2-2.5 hours. Serve mixture with hot cooked rice.

    SOUNDS DELISH! I WILL USE ALL THE LOWER-SODIUM ITEMS! DOES THE TAPIOCA SERVE TO THICKEN THE SAUCE? I WILL ALSO ADD IN 1 TEASPOON OF JARRED CHOPPED GINGER. THANKS! - 1/23/09
