    8 Organic Whole Wheat Tortillas (2 oz each)
    2 lbs boneless skinless chicken thighs
    1 medium onion
    1 1/2 cups frozen pepper strips
    3 cloves garlic, chopped
    1 packet taco seasoning mix
    8 oz Follow Your Heart Vegan Cheese Alternative - Cheddar
    8 tbs Tofutti Better Than Sour Cream
    8 tbs Pace Salsa


Preheat the oven to 350.
Chop the garlic.
Cut the onion into half moon slices.
Cut the chicken into bite sized pieces.
In a large skillet saute the onions, garlic, peppers and chicken until the chicken is cooked through and the onions are tender.
Meanwhile shred the cheese.
Add the taco seasoning packet and the water recommended.
Cook until the water reduces into a thick sauce.
Lay out 4 of the tortillas onto cookie sheets so that they do not overlap.
Place 1/4 of the chicken and vegetable filling on each tortilla.
Add 1/4 of the cheese to each.
Top each with another tortilla.
Bake until the tortillas crisp and the cheese melts.
Cut each quesadilla in 1/2 for a portion.
Top with 1 tbs of sour cream and 1 tbs of salsa.
