Ingredients

    1 raw potato - I used a non fat potato i found at QFC.
    1/4 cup sweet onion chopped
    1/4 cup green onion chopped

Directions

I was bored, didn't know what I wanted for lunch, just wanted some veggies. So, I threw this together, i'm sure it could be healthier, but it was satisfying.

1) Peel and slice potato into thin slices. Chope onion and green onion.

2) Melt margarine in small skillet. Add ingredients. Cook over medium heat. Brown to desired consistency. I like mine brown and carmelized.
