Number of Servings: 2


    * Mushrooms, fresh, 4 cup, pieces or slices
    * Onions, raw, .5 cup, chopped
    * Olive Oil, 1 tbsp
    * Margarine, hard, 1 tsp
    * Garlic, 6 clove
    * *Flour, white, 3 tbsp.
    * White Wine, 2 fl oz
    * Thyme, ground, 1 tbsp
    * veggie bouillon cubes or granules, 1 tsp
    * 4 cups boiling water


Toss chopped mushrooms, onion and garlic cloves in olive oil. Roast in 400° oven for 15 minutes.

Melt margarine in pot over medium-high heat and stir in flour. Cook, stirring, until roux is a deep brown. Stir in chopped veggies and cook 2 more minutes.

Dissolve bouillion in water. Slowly stir into roux mixture. Add wine and thyme.

Pour mixture into blender and pulse on low speed 4-5 times. Return to pot and simmer 15 minutes before serving.
