    1/2 Small onion, diced (~1C)

    1 Cup fresh mushrooms, sliced

    1/2 cup Egg Beaters

    2 oz. Part-Skim Mozzerella Cheese, grated or cut into small pieces

    2 small or 1 large corn tortilla (white or yellow)

    3 Tbsp. salsa


Spray a skillet w/ non-stick cooking spray and sautee onions and mushrooms on medium-low heat until soft and caramelized, spraying with cooking spray as needed to prevent sticking.

Add Egg Beaters and cook for a minute or two before adding cheese. Stir together.

Warm tortillas in microwave approx. 30 seconds.

When cheese is melted and egg looks cooked, fill the tortillas with what will fit, and enjoy the rest on the side. Top w/ the salsa.


I found this needed no additional seasoning - I have a very flavorful salsa and don't like things too spicy. I prefer this for lunch, but it would be great at any meal!
