Ingredients

    1/2 lb. green beans, ends trimmed
    1 T. fresh squeezed lemon juice
    1/2 T. dijon mustard
    1/4 tsp. sea salt
    Pepper to taste
    1 tsp. agave nectar
    1 small clove garlic, grated
    1-2 tbsp olive oil
    1 tsp fresh tarragon, parsley, basil, or dill

Directions

Cook beans in boiling water for 5-7 minutes until just tender to the bite. Remove and rinse beans through very cold water until cooled. Drain to dry, set aside.

In a bowl, whisk together lemon juice, mustard, salt, pepper, agave, and garlic. Continue to whisk and slowly drizzle in olive oil to emulsify. Finally, stir in chopped herb. Toss beans with viaigrette and serve.
