    2 cups red lentils
    8 cups water or chicken broth
    1/2 tsp. cumin
    1/2 tsp. paprika
    1 large onions, diced
    2 cloves garlic, minced
    2 Tbsp. olive oil
    Juice of 1 lemon
    2 bouillon cubes (optional)


Wash lentils. Combine with water or broth and bring to boil.

Cover and simmer for 1/2 hour, stirring occasionally.

When lentils are tender, add dry spices and bouillon (if using).

Saute the onions and garlic in olive oil until golden brown. Add to soup. Simmer for 5 minutes.

Turn off heat, add lemon juice, and stir.

Garnish with parsley and parika or fat-free Greek yogurt. Serve with lemon wedges on the side.
