    6 Chicken Breasts, skinless
    3/4 cup plain bread crumbs
    1/2 cup Parmesan cheese, grated
    1 Tablespoon dried parsley
    14 ounces low-sodium, low-fat chicken broth
    6 oz sliced artichokes
    12 ounces no salt added diced tomatoes
    lemon juice to taste


Combine bread crumbs, parmesan cheese and dried parsley. Dip chicken breast in water, then dip in crumb mixture. Place on baking sheet coated with nonstick cooking spray. Bake at 300 degrees for 35 minutes or until middle is done. Do not cover chicken while baking.
Prepare sauce by combining chicken broth, artichokes and tomatoes in medium sauce pan. Add lemon juice to taste. Cook on medium heat until heated through and slightly reduced.
Remove chicken from oven and place on a plate. Ladle sauce over chicken breasts. Garnish with fresh parsley.
