    1 carrot sliced
    1 onion, chopped
    1 stalk celery, diced
    2 T canola oil
    3 T tomato paste
    4 cups chicken broth
    2 cups water
    1 can white beans
    1 can diced tomatoes
    12 ounces lean ground beef
    1 egg
    1/2 cup bread crumbs
    1/2 cup grated parmesan cheese
    1 cup any pasta


saute carrots, onion, celery with oil in a large pot until tender. Add the tomato paste and stir for 30 more seconds. Add the chicken stock, water, tomatoes, and beans to the pot, bringing to a boil.

While the soup is heating up, mix ground beef, bread crumbs, egg, and cheese. Form into 1 inch meatballs and drop into the soup. Simmer for 8 minutes. Increase to med-high and add pasta - cook according to package directions.
