    1 lb whole wheat penne (or other pasta)
    Olive Oil, 2 tbsp
    1/2 fresh red pepper, diced
    1 can petite diced tomatoes
    4 oz white wine
    2 cloves garlic, chopped
    1/2 chopped onion
    1 cup eggplant (about 1/2 regular eggplant, or one japanese eggplant), chopped
    1/8 tsp red pepper flakes
    1/4 tsp dried basil
    1/2 tsp dried oregano
    2 chicken sausages (I use chicken, spinach, and feta sausages)
    1 tsp tomato paste
    1/2 cup fresh parsley
    1/4 cup crumbled feta cheese (optional)


Cook pasta according to instructions. While pasta is cooking, swirl olive oil in a large saucepan over medium heat. Add garlic, onion, sausage and eggplant to pan. Cook until sausage is browned, about 5 minutes. Add peppers and spices. Cook 1 minute. Add wine. Cook until alcohol is cooked off - about 2 minutes. Add tomatoes and tomato paste. Cook about 10 minutes until all ingredients are nicely combined. Serve over pasta, topped with fresh parsley and feta cheese. 8 servings.
