    1/3 C Chopped Celery
    1/4 C Chopped Green Pepper
    1/4 C Chopped Onion
    1 T Extra Virgin Olive Oil
    1 14.5 Oz Can No Salt Added Diced Tomatoes
    2 C Low Sodium Chicken Broth
    2/3 C Whole Grain Rice
    3/4 t Garlic Powder
    1 1/2 t Dried Basil or Thyme
    1/4 t Black Pepper
    1/4 t Hot Pepper Sauce
    1 Bay Leaf
    2 C Cooked Cubed Chicken or Turkey


In a large skillet, cook celery, onion, and green pepper in oil until tender. Stir in undrained tomatoes, chicken broth, rice, basil, garlic powder, pepper, hot pepper sauce, and bay leaf. Cook and simmer about 20 minutes or until rice is tender. Stir in chicken. Cook until heated. Discard bay leaf. Serves 4.
