Ingredients

1-in fresh ginger, coarsley grated
2t. soy sauce lite
6 oz feta, cut into 3/4 cubes
1T sunflower oil
2 c. cooked brown rice
4T veg broth
5 scallions, sliced diagonally
3 c halved small mushrooms
6 oz sugar snap peas, cut in half lengthwise
12 raw jumbo shrimp, peeled
4T chopped cilantro
2T chopped parsley
2T sesame seeds
Directions
Serves 4
1) Put ginger in garlic press and squeeze ginger juice into small bowl. Stir in soy sauce. Add cubes of feta and gently toss to coat. Set aside to marinade while you cook.
2) Heat oil in nonstick skillet over med-hi heat. Add scallions and mushrooms and saute 1 minute. Add peas and shrimp, stirring frequently until shrimp are cooked through (2-3 min)
3) Heat brown rice in separate sauce pan with broth, covered, until broth has evaporated.
4) Stir feta cubes into shrimp mixture and gently stir until feta is heated through (30 sec)
5) Serve rice in bowl and add shrimp mixture on top. Serve with cilantro, parsley and seeds. sprinkled on top.
