Introduction

A really quick lunch to prepare, gets at least 3 protions of veg in, and tastes great.

When i make this for my family, i cut up all the ingredients (along with some additional less 'diety' options like salami) and serve all the ingredients separately, the kids have a great time creating their own tortilla

Ingredients

    1 Wholemeal tortilla bread
    80g (aproc 1.5 inch slice) of cucumber
    40g (about 4) cherry tomatos
    30g (about 2 large leafs) Romaine Lettuce
    2g (about 10 leafs) Flat Parsley
    1 tbsp Hummus
    40 g (about 1/2cm thick slice) Light Halloumi cheese

    can also add (not included in nutritional info)
    olives
    lemon juice
    spinach leaves

Directions

Makes 1 fully stuffed Tortilla,

1- Cook the cheese in a George Foreman Grill - alternativly you can fry it in a non-stick pan with a bit of spray live oil - It only melts slightly and is ready once it turns slighly brown. crispy on the outside but still soft inside

2- Meanwhile, spread the Hummus on the tortilla & slice up the vegtables

3 - arrange the betables and cheese on the tortilla, wrap it up,

done
