Ingredients

    1 cup cooked brown rice
    8 oz frozen shrimp, with tails off **
    1/2 cup frozen peas & carrots
    2 green onions, chopped
    1 egg, beaten
    1 tbsp olive oil
    1 tbsp soy sauce
    pepper to taste

    **Can also substitute 8 oz of cooked chicken, beef, or pork. For Vegetarian style add 1 cup assorted chopped fresh vegetable such as asparagus, broccoli, mushrooms, or cabbage.**


Directions

In a small bowl beat egg, set aside.

Heat olive oil in large skillet on med high, add cooked rice, peas & carrots, shrimp, & green onions. Cook for 2-3 minutes or until shrimp & veggies are warmed through.

Clear out the center of pan by pushing rice mixture to the sides, pour egg into space. Scramble egg until almost firm about 1 min. Mix egg & rice mixture together cook additional 1 min until egg done through. Add soy sauce & pepper. Serve immediately.

**This makes 2 dinner-sized servings, you can also use it as 4 side servings if you wish.

    Excellent! Served this without the shrimp but with Orange Chicken. Husband said it was much better than our favorite chinese restaurant! Definitely a keeper. - 4/2/09

    I added healthy, lean deli ham (chopped) to make it taste more like the combo fried rice I usually order, and used 90-second microwave brown rice. Quick and tasty! - 3/11/09

    Not real thrilled with this one. It's edible and that's about all. I had to doctor it up with 5-spice powder, garlic, other spices and it was STILL bland and uninspiring. My husband DEFINITELY didn't like it. And 2 servings? For sumo wrestlers, maybe. Not making this again. - 7/2/13

    Great meal. I doubled the recipe to get 4 servings. My kids who are very picky both ate it without complaint, even though they are not fans of peas. This is the 1st recipe I made from SparkPeople and I hope all are as good as this! - 1/8/12

    Delicious!! I used fresh carrots and mushrooms instead of the frozen peas and carrots. Also used a couple of teaspoons from a "fried rice" seasoning packet. A definite keeper! - 1/28/11
