Delicious Mexican flavor without all the fat!! Delicious Mexican flavor without all the fat!!
Number of Servings: 20


    20 corn tortillas
    19oz can enchilada sauce
    2 cans black beans, drained
    2 cups frozen corn, thawed
    5 green onions, chopped
    2 cups shredded 2% Colby Jack cheese
    1 cup fat free sour cream
    1 tbsp dried or 4 Tbsp fresh (chopped) Cilantro, more or less to taste.


Heat oven to 350*.
Mix beans, corn, green onions, cheese, cilantro, & sour cream in large bowl, set aside.
Heat enchilada sauce for 2 minutes in microwave (or until warm). Then cover tortillas with paper towel & heat for 2 minutes (or until warm). One at a time, dredge tortillas in sauce, fill with bean mixture. Roll, then place in baking dish. Pour remaining sauce over top. Bake for 30 min.
