Ingredients

2c chopped green bell peppers
2c prepared brown rice
1 can condensed tomato soup
1 can diced tomatoes
1lb ground turkey
1 clove garlic
1/2c diced onion
1c shredded cheese
Directions
Preheat oven 350
Brown ground turkey, drain and rinse. Return to pan and add peppers, onions and garlic. Cook over medium heat 5 minutes. Add tomatoes, soup and rice, simmer 5 minutes.
Pour mixture in sprayed glass baking dish. Sprinkle with cheese, and cover with foil. Bake 20-25 minutes, uncover and bake 5 minutes.
Makes about 6 1 cup servings.
