Introduction

Ingredients

    2 tsp olive oil
    1 small red onion cut in slices
    1 red pepper chopped in bite sized pieces
    2.5 cups whole cherry tomatoes
    2 cloves garlic pressed with remains diced
    .5 cup thinly sliced zucchini
    1 tsp salt (to taste)
    1 tsp Pepper (to taste)
    1tsp red pepper flakes
    1tsp basil flakes
    3 tbsp flour
    2 cup skim milk
    40z goat cheese
    2 cups arugula
    1 can navy beans (small white beans)
    8 cups whole wheat pasta

Directions

makes 8 servings 1 cup pasta 1 cup sauce

Boil water for pasta while prepping/making the sauce
Cook onions in olive oil until transparent over medium to medium low heat
Add red pepper, garlic and tomatoes
cook for about two minutes
Press tomatoes lightly with back of spoon to break them slightly
add zucchini and spices, cook for 2 minutes
sprinkle flour over vegetables to coat and cook for one minute
should be time to throw in the pasta, cook as directed
add milk and stir
Cut goat cheese into rounds and add to sauce
stir until melted and sauce begins to thicken
rinse canning liquid from beans
add beans to sauce
add arugula to sauce about 2 min before ready to serve
adjust spices as needed
