    lean ground beef - 1 lb
    1 onion, chopped finely
    1 tsp garlic
    2 tsp parsley
    1 egg
    3 saltine crackers crushed
    1 cup sliced mushrooms
    1 can campbells mushroom soup
    1 cup skim milk
    salt and pepper to taste


*in mixing bowl combine beef, onion, garlic, parsley, egg, crackers and salt and pepper
* mix with hands and form into small (1 inch) meatballs. Place in skillet on med-high heat.
* rotate meatballs carefully so as to not break any
* add mushrooms to saute as meatballs cook
*cook with lid on skillet until meatballs are brown all over and no longer break apart easily
* drain any excess fat (if using extra lean ground beef there should only be juices from the mushrooms)
* mix together soup and milk and add to meatballs
* cover, turn to med/ low-med heat and let simmer 15 - 20 minutes
** Serve on rice or egg noodles
