Introduction

Ingredients

    Wet ingredients
    • 1 large egg, beaten
    • 3/4 cup nonfat yogurt
    • 1 tablespoon canola oil
    • 3 tablespoons honey
    • 1 1/2 teaspoons vanilla
    • 2 cups apples, grated

    Dry ingredients
    • 1 cup whole wheat flour
    • 1/2 cup plain white flour
    • 1/4 cup ground flax seeds
    • 1/2 pecans, chopped
    • 10 dates, diced
    • 2 teaspoons baking powder
    • 1 teaspoon baking soda
    • 1 tablespoon cinnamon (to taste)
    • 1/8 teaspoon ground cloves
    • 1/4 teaspoon salt

Directions

Grate apple and lightly beat egg. Place wet ingredients in a large bowl and mix well.

Roughly chop dates and pecans. Measure all dry ingredients into another bowl and stir well with a fork. Add the dry ingredients to the liquid ingredients and gently fold together until the flour is just moistened.

Spray regular muffins pans and divide mixture evenly between them.

Place in a 350°F oven and bake for about 12 -15 minutes. Remove and place on cooling rack.

Makes 12 medium size muffins
