Introduction

Recipe I found from Martha Stewart for light chicken parm-I tweeked it to make it even lighter. Yummy with pasta as a side dish, salad and garlic bread. Ingredients

    Ingredients:
    2 cans Tomatoes, canned, no salt added, 1 TB Parmesan Cheese, grated,
    1/4 C *Progresso Bread Crumbs - Italian style Pepper, to taste (I left out the added salt)
    1 Egg white,
    1 Tsp Extra Light Olive Oil,
    1 Garlic, clove, minced
    4 oz Mozzarella Cheese, part skim milk


Directions

Preheat oven to 425 degrees, with rack in upper third. Line a rimmed baking sheet with aluminum foil, spray with olive oil spray or brush with olive oil. set aside. Mix bread crumbs parmesan cheese and pepper ( salt if you wish). In separate bowl lightly beat egg white. Dip one side of breast in eggwhite, then crumb mixture, press lightly to adhere crumbs firmly & place on prepared cookie sheet breaded side up. ( don't bread both sides just one side) Bake
12-15 min or until crumbs are browned and crisp. Be sure the chicken is cooked. Remove from oven, sprinkle each breast with mozzarella cheese. Continue baking until chicken opaque and cheese is lightly browned 2 to 5 minutes.
Meanwhile-in large skillet place tomatoes, breaking them with fingers or wooden spoon, add garlic season with salt and pepper to taste. Bring to boil, reduce heat and simmer until sauce has thickened 6-8 min. Spoon sauce onto plates,reserving some for drizzling- put chicken on top, drizzle more sauce over chicken and serve.
