    1 tbsp olive oil
    50gms bacon or ham, chopped
    50gms mushrooms (fresh)
    100gms cooked shredded chicken
    1-2 carrots, sliced and cooked
    1 sweet potato/kumara, cubed and cooked
    500mls chicken stock
    1 tbsp cornflour
    cold water to mix

    1.75 cups self-raising flour
    pinch of mixed herbs
    75gms butter
    cold water to mix


Preheat the oven to 200C.

Heat the olive oil in a frying pan and gently cook the bacon (or ham) and mushrooms until soft.

Add the cooked chicken, veges and stock and bring to a simmering point. Mix the cornflour with a little cold water and stir this into the chicken mixture to thicken it. Pour the mixture into an ovenproof casserole dish.

To make the topping, put the flour, herbs and butter in food processor and process in small bursts until the mixture looks like breadcrumbs. If no processor, rub with fingertips. Add enough cold water to form a dough. Knead lightly onj a floured bench, then roll to fit the top of the meat dish. Gently lay the dough over the top of the chicken mixture and score a diagonal pattern across the dough with a knife.

Bake for 20 minutes or until risen and golden.
