    425gms can Tuna in spring water
    2 shallots or spring onions
    1 cup breadcrumbs
    300gm can cream style corn
    1 tsp Mexican chili powder
    1/4 cup chopped parsley
    3 eggs
    300gms jar tomato salsa


Drain tuna. Wash, trim and slice shallots or spring onions finely. Mix tuna, shallots, breadcrumbs, corn, chili powder, parsley and eggs together until well combined.

Line the bottom of a 20x10cm loaf dish and pack mixture in.

Cover with foil and bake at 180C for 30 minutes. Remove foil and continue cooking for a further 15 minutes or until set.

Remove from oven and stand for 10 minutes to firm before turning onto a serving dish.

Serve with tomato salsa.
