I got the idea for this recipe after trying Grammies super lowfat mousse. I got the idea for this recipe after trying Grammies super lowfat mousse.
Number of Servings: 8


    1 package sugar free fat free instant vanilla pudding
    2 1/2 cups vanilla soymilk
    2 cups lite whipped topping
    56 reduced fat vanilla wafers
    24 large strawberries
    16 tablespoons lite whipped topping


1. Whisk cold milk into pudding mix for 2 minutes. 2.Gently fold in lite whipped topping (2 cups).
4. When ready to serve, put 3 reduced fat vanilla wafers in bowl, top with 1/3 cup pudding mixture, top with 1 strawberry sliced. Repeat layers. Crumble remaining vanilla wafer over strawberry layer, top with 2 tablespoons whipped topping and garnish with a strawberry "fan".
This makes 8 servings.

I don't like the vanilla wafers soggy, so I make these just before ready to eat. You could also make the whole recipe and chill.

To make a strawberry "fan" make thin cuts lengthwise from the tip towards the hull stopping short of the hull, fan out.
