Ingredients

    1/4 cup Splenda
    1/4 cup margarine
    1 egg
    1 1/2 cup crushed pineapple, not drained
    2 cups whole wheat flour
    1 1/2 Tbsp baking powder

Directions

1. Preheat oven to 400 F.
2. Mix together Splenda and margarine.
3. Add egg and mix well.
4. Stir in pineapple.
5. Add flour and baking powder and mix together, do not overmix.
6. Spoon into muffin tins sprayed with Pam.
7. Bake for 15 - 20 minutes or until inserted toothpick comes out clean.
Makes 12 muffins.
