Number of Servings: 2


    2 baking potatoes
    1/4 cup dehydrated onion flakes or chopped fresh green onions
    1/4 cup sour cream, fat free
    1 Tbsp Smart Balance Light Spread
    1 Tbsp prepared Horseradish
    1/2 tsp salt
    1/2 tsp black pepper or freshly ground
    2 oz Mozarella Cheese, part skim milk
    1/2 can Pink Salmon


Preheat oven to 450* Bake potatoes for 50 minutes or until done; cool slightly. Reduce oven temperature to 400*, Split the top of the potatoes on top and scoop out potato leaving enough to hold the sides together. Mix with every thing else except the cheese. Stir well. Fill the potato shells with the mixture, place in a casserole dish, sprinkle with cheese and bake for 15 minutes or until hot at 400*
Serve with combination salad and fruit for dessert.
