This was the recipe I grew up with. This was the recipe I grew up with.

    Salmon, 1 can - remove bones and skin
    1 sleeve saltine crackers
    1 egg, beaten
    Lemon juice approx 1 tsp or to taste
    water - enough so patties feel moist
    1 T vegetable oil - to cook patties in


Clean salmon of bones (the vertebrae, the other bones are edible and good for calcium) and skin. Beat egg and add to salmon. Crush crackers (easiest is putting them in a ziploc baggie and crush with can - if you have kids they can help) and add to bowl. Add a splash or two of lemon juice* and water. Mix together, salmon should not feel dry; if it does add more water and then make patties. Heat oil in skillet on medium high heat and add patties. Once all patties are in the pan (5 typically fit in mine) then reduce heat to medium. Cook for about 5 minutes on first side and when patties are golden brown flip (I find using a spatula and fork help with this to not splatter the hot oil) and continue cooking for an additional 5 minutes or until golden brown.
* I use lemon juice from a bottle but I'm sure fresh would taste even better.
