    1.5 cups uncooked WW elbow pasta
    12 1 oz slices peameal bacon
    1/2 cup finely chopped onion
    2 tbsp butter
    3 tbsp WW flour
    1 tsp salt
    1 3/4 cups skim milk
    2 cups reduced fat shredded cheddar cheese
    1 cup low fat sour cream


cook macaroni, drain, set aside. Broil bacon (i use my george foreman grill instead).
in saucepan, saute onion in butter until tender, add flour and salt. gradually stir in milk. cook over medium heat stirring constantly until thickened and comes to a boil. reduce heat to low. add cheese and sour cream. stir until cheese melts. combine with macaroni. put in casserole dish and bake at 350 deg F for 25-30 minutes. makes 6 servings, with 2 pieces peameal bacon each. freezes well.
