    1 batch starter
    2 c. warm water
    2.5 c. AP flour
    1 egg
    4 T. oil
    1/4 c. milk
    2 T. sugar (brown)
    1 tsp. baking soda
    1 tsp. salt.


The night before, add 2 cups of warm water and all flour to the starter in a non-reactive bowl; stir with a non-metal implement. Place inside oven.

In the morning replace 1 cup of starter in the fridge.

Add to remaining batter, 1 egg, 4 tbs. oil, 1/4 cup milk, 2 tbs. sugar (brown), 1 tsp. baking soda, and 1 tsp. salt. Mix lightly. Let rest 5 minutes.

Cook at 450-500 degrees F. Batter should be thin. Makes approximately 13 waffles (each waffle equals one serving).
