    1 pound lean ground beef
    1 medium onion - chopped
    1 packet taco seasoning
    1 can condensed tomato soup
    1 cup canned diced tomatos with juice
    8 medium whole-wheat tortillas, cut into 1 inch pieces
    1 cup shredded low-fat cheddar cheese


Pre-heat oven to 350 degrees. Brown ground beef and onions. drain any excess fat. Mix in packet of taco seasoning, add tomato soup and diced tomatos with juice. Remove from heat, add 1/2 the cheese and the tortillas. Mix until well-coated. Weight watchers point = 6 per serving

Pour mixture into 13x9 baking dish that has been sprayed with non-stick cooking spray. Bake until hot (about 20 minutes) then top with remaining cheese and bake until melted.

Serve over a bed of lettuce and top with sour cream, olives and diced tomatos (all optional and not counted in calorie count). Serves 8
