Introduction

I don't have a lot of time so I cut a few corners on this soup - the results were still delicious! I don't have a lot of time so I cut a few corners on this soup - the results were still delicious!

Ingredients

3 - 12 oz. bags of Aunt Mids Cubed Butternut squash
Nishiki Brown Rice Bowl - 1/4 cup already cooked
.5 cup sweet onion or dried onion flakes to taste (about 2-3 Tbsp)
3 Garlic Cloves or 2 Tsp of Garlic paste to taste
1 1/2 Cup Half and Half Cream
    1 tsp ground ginger
    1/4 tsp Cloves
pinch Allspice or more to taste
    1.5 tsp Cinnamon
"a handful" of Sugar - or up to 1/4 cup
Puree in a blender or with an immersible
    Add broth as preferred

Directions

Cook the Squash according to the directions - or until soft. Cook the Rice and add to squash. Add the Half and Half and let it simmer for 10-15 minutes more. Blend or puree until smooth and add broth as needed for desired consistency. Makes 8-10 1 cup servings depending on the consistency - i.e. how much broth you add.
