Introduction

Yummy muffins. Yummy muffins.
Number of Servings: 15

Ingredients

    2 cups whole wheat flour
    2.5 tsps baking powder
    1/2 cup whole oats
    3 tbls cocoa powder, unsweetened
    1 oz coconut
    2 egg whites, whipped
    1 cup nonfat milk
    1/4 cup unsweetened applesauce
    2 tsps sugar
    2 tsps splenda

Directions

Combine all wet ingredients except eggs in one bowl. Sift flour, baking soda and cocoa togethor in another bowl. Add remaining dry ingredients. Combine wet and dry ingredients. Fold in egg whites carefully. Don't over mix.
Optional: Sprinkle tops with brown sugar and a pinch of coconut.
Pour into paper muffin cups. Bake at 350 degrees for 20-25 minutes.
